Why do scientist say that cats and dogs only see in black and white and that birds dont have tast buds, then why is it that birds are picky and only like to eat certain treats. How do they know when they arent the animal. Couldnt it be maybe that animals bodies are just different from us?
Dogs do not only see in black and white to be absolutely correct. Dogs do not have the ability to see the breadth of color that humans do even though they have both rods and cones. If a human can't see red or green they could be deemed color blind.
Scientists have observed cat and dog behavior and over many trials have seen that dogs and cats do not react to subtle changes in color when all else is the same; therefor we assume that means they are colorblind.
Yet what does colorblind mean to a dog? If I ask you to describe the color "red" you may give me examples of things that are red or descriptions of heat as being "red" but that may not mean anything to me. We have no concept of how a dog truly thinks. we can see actions, but not thoughts.
The same is true of birds, it is simply an educated guess based upon observation of what they eat and the fact that (for example) birds have a very poor sense of smell. If you pick up a baby bird and put it back into the nest the mother bird will not reject it as the urban legend goes. We understand that our sense of smell and taste are closely linked so we think a birds must be as well.
Now that we can see into the human brain as it functions and can see which part of the brain reacts to certain stimulus we can figure out what may be wrong when a human how do cats seeis colorblind or can not taste. We will then make comparisons to animal brain activity and observation to make similarities. It may be wrong, but they are our best hypotheses.

it's all abut optical sensors. they lack the rods and cones that allow to see in color. they can see in less light than we can so it's a trade off. we know what to look for, if it's not there than it's not there

Cats and Dogs see different level of energy the humans don't see. Cats and Dogs see in black and white and in color as well. They also see in Infra Red, hence in the dark. Animals read the energy bands around your body, a cat can spot a rat at a distance cuz it sees the energy field around the rat , hovering as high as 6 feet above the critter's body. Birds HAVE taste buds and whoever told you they don't have taste buds is a stupid idiot. The animal kingdom is a mystery to humans cuz the form of communication is at a different level.

There are parts of the eye anatomy that are responsible for seeing black and white (Rods) and colors (Cones).
Dogs have only rods in their eye anatomy. also, lab test confirm that they make no distinction based upon color.
This is how they know that bulls can only see red.

I don't know about the birds, I would think they can taste, they certainly like sunflower seeds. I think it actually varies quite a bit from bird to bird.
However, the way they tested the cats and dogs is they give them tests to distinguish different objects. Then they give them rewards or punishment if they do it right or wrong(right or wrong being a choice between colors). The animals will certainly distinguish among objects if they can, but they can't, so to the best of our knowledge, they are color blind.
they do it by examining the eyes and tounge. Cats eyes dont have colour recipients in their eyes.
I don't know that is a very good question. Maybe for the cat's and dog's thing the scientists somehow took the animals eyes out and did expiraments on them. Well, you sure tought me something I didn't know birds didn't have taste buds. Well I hope i gave you an idea.
Dogs and cats do not only see in black and white. And scientists do not say that they do. Both cats and dogs have cones (colour receptors) and rods (monochrome detectors) in their eyes.
Both dogs and cats are far better than us at seeing at night, and night vision receptors in them and us are only monochrome.
